Barley Tabouleh Salad


1 ½ cups cooked pearl barley
½ cup sweet pepper
1 ½ cup diced cucumber
1 diced tomato
3 tbsp fresh chopped parsley
3 tbsp chopped red onion
¼ cup tomato juice dressing (see below)
Fresh cracked pepper

Tomato Juice Dressing
½ cup low sodium tomato juice
¼ cup water
1 tsp crushed garlic
1/8 tsp cayenne pepper
½ tsp dried oregano
½ tsp dried thyme
Mix all ingredients together. Store in serving container; chilling for at least one hour. Shake well before using.


1. In a larger bowl, fluff cooked barley with fork to loosen.
2. Slowly fold in remaining ingredients.
3. Add tomato juice dressing, as desired, and serve.

Yield: 4 Servings

Serve it with a lean protein.
