Vegetable Egg Bake


8 slices of whole grain bread
6 eggs
6 egg whites
1/2 cup skim milk
1/4 cup water
1/2 cup broccoli, sliced
1/2 cup fresh mushrooms, sliced
1/2 cup chopped tomatoes
1/4 cup diced onion
1/2 cup part-skim mozzarella cheese


1. Tear bread and put it in the bottom of a 9x13 cake pan.
2. Beat eggs, add milk and water. Pour this mixture over the bread.
3. Evenly coat pan with broccoli, mushrooms, tomatoes, and onions.
4. Sprinkle even amounts of cheese over top of mixture.
5. Bake in oven at 350 degrees F for 45 minutes.

Serving Suggestion: Serve with a side of fresh fruit.
