Tropical Cucumber Salad


2 tsp light soy sauce

1 tsp freshly grated lime zest, plus more for garnish

1 lime squeezed, juice

1 tsp canola oil

2 tsp light brown sugar

1/4 tsp crushed red pepper

1 medium English cucumber, cut into 3/4-inch dice

1 avocado, cut into 3/4-inch dice

1 cup cantaloupe, diced

1/4 cup fresh cilantro, chopped

3/4 cup pineapple, diced


1. Whisk soy sauce with lime zest, lime juice, oil, brown sugar, vinegar and crushed red pepper until combined.

2. Add cucumber, avocado, cantaloupe, cilantro and pineapple; gently toss to coat.

3. Serve garnished with lime zest if desired.
