Pine Nut Pancakes


1 ½ cups reduced fat biscuit baking mix

1 cup puffed rice cereal

1/3 cup finely chopped banana

1/3 cup shredded peeled apple

¼ cup raisins

2 tablespoons pine nuts, toasted (tip below)

1 egg

¾ cup milk

½ tsp vanilla extract


1. In a bowl, combine baking mix, cereal, banana, apple, raisins and pine
nuts; set aside.
2. In a separate mixing bowl, beat egg, milk and vanilla; stir into dry
ingredients just until moistened.
3. Pour ¼ cup pancake mix onto a lightly greased hot griddle; flip when
bubbles form on top of pancakes.
4. Cook until second side is golden brown. Serve immediately.

Serving Suggestions:

Tip: Toast pine nuts in a skillet over medium-low heat. Shake frequently to
avoid burning. When the pine nuts are browned, transfer to a plate to cool.
