Mushroom & Cabbage Phylo Pie


Mushroom and Cabbage Phylo Pie

(See notes for preparation below)

2 large packages of mushrooms

1 small red cabbage 

1 small package of carrots

1 medium white onion 

1 poblano pepper

Fresh parsley

2 eggs

1 cup mozzarella cheese

12 oz. container of fat free cottage cheese

1/4 cup crushed walnuts

Phylo dough in sheets



  1. In a large sacepan over medium heat, sautee the first 6 ingredients until cabbage is fully wilted. 
  2. In a small bowl, mix eggs, cheese, cottage cheese and walnuts. Pour over saute'ed vegetables.
  3. Layer phylo dough in backing pain; add 1/3 of vegetable mix on top of phylo dough. Add 3 layers of dough and mix. Top layer must be phylo dough.
  4. Place in oven and back for 40 minutes, or until dough is golden brown.
