Mediterranean Salmon


¼ cup extra virgin olive oil

3 Tbsp balsamic vinegar

3 cloves garlic, crushed

1 Tbsp chopped fresh cilantro

1 Tbsp chopped fresh basil

1 tsp garlic salt

Four 4-ounce salmon filets


1. In a medium bowl, combine all ingredients, except Salmon. Mix well.

2. Pour over salmon filets and marinate overnight.

3. To Broil: place salmon 6-inches from broiler, cook 15 minutes, turning once. Salmon is done when lightly browned and flakes easily with a fork.

Yield: 4 servings.

Serving Suggestions:

Serve with a green salad topped with fresh fruit.
