Macaroni and Cheese

Ingredients:

1 ½ cups whole wheat elbow macaroni
 
1 cup skim milk
 
½ cup canned navy beans, rinsed, drained and pureed
 
Non-stick cooking spray
 
½ cup reduced fat cheddar cheese, shredded
 
½ cup part-skim mozzarella cheese, shredded
 
¼ teaspoon garlic powder
 
¼ teaspoon paprika
 
Pepper to taste

Directions:

1. Bring a large pot of water to a boil, add macaroni and cook for 9-11 minutes, until pasta is softened. Drain in colander.

2. Combine milk and beans in food processor; puree.

3. Coat a large saucepan with cooking spray and heat to medium. Add the bean mixture to pan and cook, stirring 1-2 minutes until
smooth.

4. Add cheese to saucepan and heat until melted and creamy.

5. Stir in garlic powder, paprika and pepper.

6. Add macaroni to saucepan and serve.
