Island Fruit Bowl

Ingredients:

1/4 cup coconut, plain or toasted

2 kiwis, peeled and sliced

1 mango, peeled and cut into chunks

1-2 cups pineapple, peeled and cut into chunks

2 cups strawberries, sliced

1 Tbsp cilantro, chopped

3/4 tsp ginger

1 cup frozen fat free whipped topping, thawed

1 box (4oz) fat free vanilla pudding

Directions:

1. In large bowl combine all fruit, cilantro and ginger.

2. In small bowl, combine whipped topping and pudding.

3. Add topping mixture to fruit, toss gently.

4. Top with coconut.
