3 Tbsp extra-virgin olive oil
1 Tbsp red wine vinegar
½ tsp black pepper
½ tsp salt
1 ¼ cup cherry tomatoes, chopped
1 cup diced seeded peeled cucumbers
1 cup bell peppers, chopped
½ cup radishes, chopped
½ cup fresh Italian parsley, chopped
1 cup cumbled feta cheese
4 8-inch diameter whole wheat pita breads, halved
1. Whisk olive oil and red wine vinegar in large bowl. Season dressing with salt and pepper.
2. Mix tomatoes, cucumber , bell pepper, radishes, and parsley into dressing.
3. Stir in feta cheese.
4. Cover and chill. Fill pita bread with salad mixture.
Yield: 4 servings
