Fruited Chicken Salad Pita


½ cup of reduced fat plain yogurt
½ cup reduced fat ranch salad dressing
2 Tbsp lemon juice
½ tsp pepper
4 cups cubed cooked skinless chicken breast
2 celery ribs, thinly sliced
1 medium apple peeled and sliced
1 medium apple peeled and chopped
½ cup finely chopped fresh spinach


1.In small bowl, combine yogurt, salad dressing, lemon juice and pepper.

2.In a large bowl, combine chicken, celery, apples, spinach, cranberries and pecans. Add yogurt mixture, and stir to coat. Cover and refrigerate until chilled.

3.Line pita halves with lettuce and onion. Fill each with ½ cup chicken mixture.

Yield: 8 servings.

Serving Suggestions:

Serve with a side of your favorite fruit or low-fat cottage cheese.
