Edamame Guacamole


1 cup edamame

1 avocado, pitted, skinned and diced

1/2 tomato, diced

2 small cloves of garlic, minced

Juice of 2 limes

1/3 cup fresh cilantro, chopped

2 Tbsp red onion, finely chopped

1/8 tsp salt

1 tsp pepper

Water, if necesary


1. Food process the edamame until smooth, adding water if necessary.

2. In a bowl, mix together and mash all ingredients until well blended.

3. For best results, refrigerate for half an hour to let the flavors blend.

4. Serve with low sodium tortilla chips or with fresh vegetables like carrots!
