Creamy Tofu Pesto Spread


1/3 cup pine nuts*

1 cup fresh basil

1 1/2 tablespoons olive oil

1 (12 oz.) package soft or firm tofu

1/2 teaspoon salt

1/2 teaspoon pepper

1-2 garlic cloves



1. Add pine nuts, basil, olive oil to food processor and blend for 30 seconds.

2. Add tofu, salt, pepper and garlic and blend for additional 10 seconds until smooth or desired consistency.

*You can skip the pine nuts if you want to.

Serving Suggestions:

Serve as spread on toast, bread or crackers, or as a dip for vegetables like peppers and zucchini.
