Creamy Artichoke Dip


1 (14-ounce) can artichoke hearts, drained

3/4 cup plain low-fat yogurt

1 cup parmigiano-reggiano cheese, grated (could also use fresh parmesan)

2 garlic cloves, minced or pressed through a garlic press

2 Tbsp fresh basil, chopped


1. Lightly pat artichokes until completely dry.

2. Finely chop artichoke hearts and put in a microwave-safe dish.

3. Add yogurt, cheese, garlic and basil. Mix well.

4. Microwave for 3 minutes on high. Stir. Microwave for 2 minutes more. Serve warm.

Serving Suggestions:

Suggestion: serve with slices of bread, pita bread or baked chips.
