2 1/3 cups of water, divided
1/2 cup of sun dried tomatoes
1 (14 1/2 ouce) can vegetable broth
1 3/4 cup uncooked couscous
4 canned artichoke hearts, sliced
1/2 cup (2 ouces) feta cheese
1 cup chopped fresh leaf parsley
1. Combine 2 cups of water and tomatoes in a microwave safe bowl. Microwave at high for 3 minutes or until water boils; cover and let stand 10 minutes or until soft. Drain and chop the tomatoes; then set aside.
2. Place 1/3 cup water and vegetable broth in a large saucepan; bring to a boil. Stir in couscous. Cover, reduce heat and simmer for 8 minutes or until tender. Remove from heat; stir in tomatoes and remaining ingredients.
