Breakfast Couscous


1 cup whole wheat couscous

1 1/2 cups water

1/8 tsp salt

1/4 cup fresh blueberries

1/4 cup fresh raspberries

1 medium apple, diced

1/4 cup chopped nuts (pecans, walnuts and/or almonds)

1/4 cup dried fruit (raisins, dates, cranberries, coconut)

2 tsp cinnamon

Drizzle of honey or maple syrup


1. Put the couscous in a medium pot, add 1 1/2 cups water and salt.

2. Bring to a boil then cover and remove from heat.

3. Let steep for 10-20 minutes.

4. Add fruit, nuts and honey.

5. Fluff and serve.

Note: cook couscous ahead of time and store in refrigerator, then at your own convenience add fruit, nuts and honey and warm in the microwave.
