Barley Tabouleh Salad


1 1/2 cups cooked pearl barley

1/2 cup sweet pepper

1 1/2 cup diced cucumber

1 diced tomato

3 tbsp fresh chopped parsley

3 tbsp chopped red onion

1/4 cup tomato juice dressing (see below) Fresh cracked pepper

Tomato Juice Dressing

1/2 cup low sodium tomato juice

1/4cup water

1 tsp crushed garlic

1/8 tsp cayenne pepper

1/2 tsp dried oregano

1/2 tsp dried thyme

Mix all ingredients together.

Store in serving container; chilling for at least one hour.

Shake well before using.


1. In a larger bowl, fluff cooked barley with fork to loosen.
2. Slowly fold in remaining ingredients.
3. Add tomato juice dressing, as desired, and serve.

Serving Suggestions:

Serve it with a lean protein.
