Balsamic Chicken Italiano

Ingredients:

4 chicken cutlets

Freshly ground pepper, to taste

1 small onion, sliced

1 clove garlic, grated

1/4 cup shallots, diced

1 tsp light oil

1/8 tsp oregano

2/3 cup fresh mushrooms

3 Tbsp balsamic vinegar

1 tsp dill

1 tsp parsley

1/2 jar (4 oz) marinated artichoke hearts

 

Directions:

1. Season chicken with pepper.

2. Saute chicken, onion and garlic in skillet with oil until almost golden.

3. Add remaining ingredients and simmer until chicken is cooked through.

Serving Suggestions:

Serve over whole wheat noodles or orzo. Sprinkle with parmesan cheese.
