1 1/4 pounds sweet potatoes, peeled and cut into 1 1/2-inch pieces (approximately 4 cups)
2 tablespoons light tasting olive oil
1/3 cup maple syrup
1 tablespoon lemon juice
1/2 teaspoon salt
Freshly ground pepper, to taste
¼ cup chopped walnuts
Cinnamon to taste
1. Preheat oven to 400°F.
2. Pour olive oil into bowl and add sweet potatoes so they are coated with oil.
3. Combine maple syrup, lemon juice, salt, pepper, walnuts, and cinnamon in another bowl.
4. Use a regular glass 9x13 baking pan, evenly spread out the sweet potato cubes, and evenly coat the cubes with syrup mixture.
5. Cover sweet potatoes and bake in oven for 15 minutes. Take off cover, stir mixture, and continue to bake for another 35-45 minutes- stirring every 10-15 minutes.
