Asian Glaze Salmon - Winning Recipe in the CompEAT Culinary Competition on Nov. 6, 2010


10 oz Salmon cut into two 5 oz pieces (size of your palm when cooked)



1 tsp honey

2 tsp hoisin sauce

2 tsp course ground spicy mustard

Cracked pepper to taste

1 Tbsp light soy sauce

2 Tbsp fresh squeezed lemon juice

Zest of 1 lemon, minced

2 Tbsp fresh squeezed orange juice

Zest of 1 orange, minced

Pinch red pepper flakes

1 clove garlic, minced

1 tsp minced fresh ginger

1 tsp sesame oil


1. Preheat oven to 400°F.

2. In a medium bowl, mix all ingredients for the marinade/glaze.

3. Brush salmon with glaze. Option: Place salmon in the marinade bowl, seal and marinate in the refrigerator for 4 hours.

4. Place on baking pan coated with cooking spray and bake for 6-8 minutes at 400°F; then, broil until glazed and bubbly.
