1 pound Gala or Fuji apples, peeled, cored, and sliced thin
¼ cup golden raisins
¼ cup dried cranberries
2/3 tsp ground cinnamon
1 tbsp of white sugar
2 slices of whole wheat bread, crumbled
16 ounces phyllo dough sheets
¼ cup trans fat free margarine, melted
1. In a bowl, combine apples, raisins, cranberries, sugar and bread crumbs; stir well.
2. Lay phyllo dough out on several lightly greased baking sheets, brush generously with margarine. Spread fruit mixture over the top of each sheet of phyllo.
3. Roll sheet up to form a log shape. Brush with melted margarine again.
4. Bake at 400°F for 30 minutes, until pastry is golden brown and fruit is tender.
